“Cajun Cooking on the Coast”

My Father opened a restaurant when I was a boy and I was pressed into service. The name of his restaurant was Zims – Steaks & Seafood. In back of the building stood a large smoker he built from scratch. He called it his Rube Goldberg creation. The smoker had two large hinged doors, five sliding shelves, a smoke stack off the back with a damper, and a fire box below. It was my job to keep the fire going and the temperature at an even number.

When I wasn’t minding the smoker I was in the kitchen chopping vegetables, stirring roux, slicing meat, deboning chickens and various other jobs associated with slave labor in a kitchen.

In his kitchen we cooked everything from scratch. We didn’t have a large supplier delivering prepared product to our door so I learned to make seasonings, rubs, barbeque sauce, and marinades from the ground up.

I’ve practiced my craft of cooking for over 45 years and now bring those experiences to you through Zim’s Cajun Catering.

We specialize in wood smoked meats, Cajun foods, and spices made just like my Father did many years ago.
